Gaul dgn garam dan kunyit, <span class=\"text_exposed_show\"><br \/>\nkukus sekejap selama 5 minit utk keringkan air saja.<br \/>\nSotong akan tetap lembut bila dibakar.<\/p>\n<p>KUAH PERCIK<br \/>\n4 batang serai diketuk<br \/>\n2 biji bawang besar<br \/>\n5 ulas bawang merah<br \/>\n1 ulas bawang putih<br \/>\nHalia<br \/>\nKunyit hidup<br \/>\nCili kering (rebus)<br \/>\nKisar semua bahan<br \/>\nAsam keping, gula dan garam<br \/>\n1 @ 11\/2 cawan santan pekat<\/p>\n<p>Tumis serai sehingga naik bau dan masukkan bahan kisar. Kacau sehingga pecah minyak. Masukkan santan, asam kepingm gula dan garam.<br \/>\nMasak sampai kuah pekat dengan api perlahan.<br \/>\nCelupkan sotong yg dikukus tadi kedalam kuah. Pastikan kuah melekat pd sotong. Kalau tidak melekat maknanya kuah masih cair.<\/p>\n<p>Bakar api besar sambil tuang kuah sikit2 atas sotong. Balik2kan. Kacau sehingga pecah minyak. Masukkan santan, asam kepingm gula dan garam. Masak sampai kuah pekat dengan api perlahan.
