Almond cookies:
- 2 cups of Almond Flour
- 1/2 cup of erythritol
- 1 pinch of Salt
- 1 teaspoon of Vanilla Extract
- 113gm /½ cup of Unsalted Butter softened
- 1 large Egg
- 1ts xantnam gum

Keto Scallion Biscuit (My version) @
Keto kuih malah
- Chopped scallions
- 1 deseeded chopped chilli
- 3 large eggs beaten
- 1 cup grated mozzarella
- 1 cup almond flour
- 2 tbs ground psyllium
- 1ts baking powder
- 1/2 ts xantnam gum
- 1/2 ts salt
~ just mix and make into a ball and bake 180’C for 25min.

Vanilla Sour Cream Cup Cakes
INGREDIENTS
- 1 and 1/3 cup (165 grams) all-purpose flour (spooned & leveled)
- 1 and 1/2ts baking powder
- 1/2 ts salt
- 1/2 cup (115 grams) unsalted butter
- 3/4 cup (200 grams) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup (120 grams) full fat sour cream
Vanilla Frosting:
- 1 cup (230 grams) unsalted butter, softened
- 2 cups confectioner’s sugar
- 2 teaspoons vanilla extract
- 2 tablespoons (30ml) heavy cream
- 1/2 ts salt
